Jerusalem artichoke salad

This is THE salad with raw Jerusalem artichoke. When raw the Jerusalem artichoke has a mild taste of nuts. The best way to add them to salads is by slicing them thinly. They combine really perfectly with apples, fresh spinach, hazel nuts and lemon.

I would advice you to try to find your own ratio between the ingredients. However, for a start you can try the following:

A handful young spinach leaves, 1/2 dl. hazel nuts, juice from 1/2 lemon, 8 small or 4 large Jerusalem artichoke and 2 apples.

Peal the artichoke and slice them into this slices. Sqeeze the lemon juice and mix well with the artichoke. Cut the apples into small pieces, cut the hazelnuts and wash the spinach leaves well in cold water. Let the water drip of the spinash leave and mix everything in a large bowl.

The Jerusalem artichoke on the picture I have grown myself in a small forest on my parents farm. The apples are also from the same forrest 🙂

    1. Hi Johnny, I looked up wikipidia and there are several explanations. Here is one of them: When the Puritans came to the New World, they named the plant with regard to the “New Jerusalem”, which they believed they were creating in the wilderness.
